Chocolate Peanut Butter Banana Smoothie


smoothie So this morning I concocted a yummy, healthy smoothie. It was super easy, super quick and did the trick.

1/2 frozen banana (I already had it sliced and in the freezer)
1 c. fat-free milk
1 t. PB2 (powdered peanut butter is my favorite right now)
1 packet of Weight Watchers chocolate smoothie mix

Combine the ingredients in a blender until smooth. The frozen banana will give it a thicker texture and won’t water it down like ice will.
The best part of this smoothie? It’s only 4 PointsPlus values! The banana and PB2 are both 0 PP+ values.

If you haven’t tried PB2 yet then I recommend it. 2 Tablespoons are only 1PP+. It can be combined with water or your daily oil, which is my favorite because it makes it a bit creamier.

The only sad part about my smoothie was when I finished it! HA!

The mummies



It’s less than an hour towards midnight and I do not have a picture to post. So here is the only photo I took today.

The kids are having a sleepover at school tonight and they requested scary cupcakes. So I made them these mummies and, what they call, seaweed monsters.

Muffin in a Mug

Welcome Company

It is confession time, my friends. Seven months of baking and blogging have taken their toll. Well it really isn’t the baking or the blogging, it is the over-consumption of the baking that has led me to today’s post.

I have pretty much always lived a healthy and balanced life. Exercising, sleeping well and eating right kept me on track. I have never had the luxury of being able to eat whatever I want in whatever quantity. I have always had to be mindful of maintaining a healthy body and weight. And for the most part, I always have – with a few slips here and there like when I spent the majority of my twenties living low-fat/high-carb and obsessively exercising. I was skinny but very unhealthy inside and out. Thankfully, my body (and my husband and my mom) forced me to come to my senses and I found balance again.

The seven unspoken rules of birthdays

A birthday in the U.S. is a time for cake, presents, and subtlety telling people the day before that it’s your birthday tomorrow.

A birthday is only one day; the birthday celebrations can go much longer.

Do rules for birthdays exist? Is there a statute of limitations for how long you can celebrate it? What if a birthday falls near a major holiday?

My birthday is April 7, a date that falls during Passover about once every two years. During Passover, there are certain dietary restrictions that forbid cake, most ice cream, and basically any food you eat during a birthday. I don’t care much about my birthday, but if I did, I would probably wait to celebrate until after Passover ended.

Unwritten rules exist for when and how to celebrate birthdays in different situations. I’m writing them down.

Kamaboko Shaped Tea Cookies

Seeing as how I had a day off yesterday and nothing to do at the moment, I decided to start thinking of fun and tasty recipes for little snacks I can bring to my next convention. I just happened to be eating Ramen when I thought now would be a great time to make the Kamaboko shaped tea cookies I’ve been meaning to try.

A simple pin wheele sugar cookie that’s delicious, fun, and definitely pocket-sized to take on the run at any convention.

Image Ingredients Used:

  • 2 1/2 cups of all-purpose flour ( I use unbleached but it doesn’t matter)

I have been craving tres leches cake since Cinco De Mayo. Yea, I am crazy that way. I can nurture a craving for a long time till it balloons into an urge that envelopes me and I have no choice but to surrender to it. I caved in and made myself a tres leches cake or the cake soaked in 3 types of milk.

The original cake is a Mexican or some Latin- American creation and is very rich and seductive. One spoonful of this custard like cake leaves you asking for more. Condensed milk, heavy cream, eggs and evaporated milk come together in an irresistible way. Sweet, creamy, sinful. It is hence usually served in most places in a small portion.

Fudge Brownies. [complete with chocolate frosting]

Orange, sea salt & chocolate. Impeccable combination.

I’ve always seen recipes for avocado pudding/frosting/crema etc…but I couldn’t wrap my head around the concept of using avocado in dessert. I finally caved…happy I did because this was amazing.

The avocado in the frosting makes for an unbelievably rich and velvety texture, something I wasn’t expecting. However, it’s important to find the right balance of sweetness so that the avocado flavor doesn’t take over. As usual, tasting and adjusting is necessary.

A few things that make this dessert special are the addition of orange zest & sea salt. These flavors are notoriously good with chocolate and heighten the chocolatey deliciousness of this dessert tenfold.

This recipe was inspired by raw food recipes which is my favorite site for all things raw. Tons of great ideas on there!
